Beet Pesto

Whip up this colourful beet pesto for a twist to the classic basil pesto. It’s another clever way to eat your veggies. You can roast the beets before whirling into a spread or buy pre-cooked ones for convenience. If you’re entertaining, serve up a veggie-centric dips and spreads bar¬†with fresh cut vegetables and whole grain crackers.

Beet Pesto

Ingredients

  • 3 large beets, roasted (or 3 cups of cooked beets)
  • 2 cloves garlic
  • 1 cup walnut halves
  • 1 cup grated Parmesan
  • 2 tbsp canola oil
  • 1 tbsp lemon juice
  • 1/2 tsp pepper

Instructions

  1. Place all ingredients into a blender or food processor.
  2. Blitz until desired consistency.
