Cheesy Zucchini Pancakes

What do you do with a zucchini of monstrous proportions? That was my dilemma when my in-laws generously gave us a zucchini that must have weighed five pounds (or at least it felt that way).

Did I mention that the zucchini looked like a duck? Needless to say that cutting it up felt a bit creepy.

After getting over my initial uneasiness, I had enough grated zucchini to make two batches of pancakes and two loaves of my double chocolate zucchini bread.

I found several recipes for zucchini pancakes and loved the one by Ina Garten. This version is tweaked as I added an extra egg to bump up the protein, and aged cheddar to make them savoury. Also, I used whole wheat flour to soak up the liquid from the zucchini.

Cheesy Zucchini Pancakes

Yield: Makes 9 pancakes.

Cheesy Zucchini Pancakes


  • 2 cups grated zucchini (roughly 2 medium) – use large holes on grater
  • 1/2 small onion, grated (approx. 2 tbsp)
  • 3 large eggs
  • 1/2 cup whole wheat flour
  • 1 tsp baking powder
  • 1 1/4 cup grated aged cheddar
  • 1 tbsp chopped herbs e.g. parsley and oregano (or 1 tsp dried)
  • butter for frying
  • *note: if your batter is too liquidy, add an extra tbsp of flour


  1. In a large bowl, mix zucchini with onion and eggs.
  2. Add flour and baking powder. Mix well.
  3. Mix in cheddar and herbs.
  4. Heat non-stick skillet to medium-low.
  5. Add 1 tsp butter to coat skillet.
  6. Spoon batter to make 3 -inch pancakes. Pat down the batter to make flat.
  7. Cook for 3-4 minutes and flip over.
