creamsicle smoothie with kefir

Creamscicle Smoothie

With spring weather finally rearing its head in Toronto, I’m devoting this week to smoothies. They’ve become a hot commodity at our house – thanks to my new Vitamix.

You see, before the Vitamix entered our lives, my kids would never drink smoothies. My handheld immersion blender, which I love, would leave bits of fibre and other good stuff in the smoothie. The Vitamix pulverizes everything – strawberry seeds, blueberry skin, you name it.

So, needless to say, the kids have had immense fun inventing their own smoothie cocktails. Today’s recipe was created by my 7 year old and features a wacky combination that actually works. It tastes of an orange creamsicle and evokes the laziness of summer. What’s not to love?

I’ve used kefir in my recipe, which is a fermented milk drink. It’s a bit too sour for my liking, but perfect in a smoothie. Fermented foods are very hot right now, and a great way to introduce some good bacteria into your gut. There’s some research to link fermented food with elevated mood.

Sounds good to me.
