Fully-loaded Holiday Bark

This no-bake recipe is adapted with permission from Canadian Lentils. I simply love the colours and textures of this bark, and I’m thinking it would make a pretty hostess gift. Plus it’s so easy and looks impressive. This was the first time I roasted red lentils in the oven, and it was easier than I thought. Not at all fussy.

This bark is called fully-loaded for a reason:

  • roasted lentils (protein + fibre among many other benefits)
  • ground flaxseed (heart healthy)
  • hemp hearts (healthy fats)
  • pumpkin seeds (iron)

You can also nuts, but I used pumpkin seeds for a nut-free option. Switch up the dried fruit. I added a tiny bit of canola when melting the chocolate as it gives it a little shine. But feel free to use a smidge of butter or coconut oil. Sprinkle on as much of as little of each topping as you wish. Enjoy!

Fully-loaded Holiday Bark


  • ¼ cup red lentils
  • 14 oz (400 grams) good quality dark chocolate, chopped
  • 1 tsp canola
  • ¼ cup dried cranberries
  • ¼ cup roasted pumpkin seeds
  • 2 Tbsp unsweetened shredded coconut
  • 1 Tbsp ground flaxseed


  1. Soak dry lentils in water for 1 hour. When ready, heat oven to 350˚F (180˚C). Thoroughly drain the lentils and scatter on a lined baking tray. Roast in oven until crispy, turning over once, approximately 15-20 minutes. Transfer to a bowl to cool.
  2. Place chocolate in a heatproof bowl and put on top of a pot of lightly boiling water. Add 1 tsp canola. Stir chocolate until it melts. (Or place chocolate in a microwave safe bowl. Microwave bowl in 30-second intervals. Stir in between intervals until chocolate melts.)
  3. Stir in half the roasted lentils.
  4. Pour chocolate mixture on parchment lined baking sheet. Scatter remaining toppings. Let the chocolate harden (approx. one hour).
  5. Break chocolate into shards. Enjoy!
