30 Nov Fully-loaded Holiday Bark
This no-bake recipe is adapted with permission from Canadian Lentils. I simply love the colours and textures of this bark, and I’m thinking it would make a pretty hostess gift. Plus it’s so easy and looks impressive. This was the first time I roasted red lentils in the oven, and it was easier than I thought. Not at all fussy.
This bark is called fully-loaded for a reason:
- roasted lentils (protein + fibre among many other benefits)
- ground flaxseed (heart healthy)
- hemp hearts (healthy fats)
- pumpkin seeds (iron)
You can also nuts, but I used pumpkin seeds for a nut-free option. Switch up the dried fruit. I added a tiny bit of canola when melting the chocolate as it gives it a little shine. But feel free to use a smidge of butter or coconut oil. Sprinkle on as much of as little of each topping as you wish. Enjoy!
