Garden Fresh Green Beans

My neighbour, Judith, dropped off the most delicious surprise last week: green beans freshly picked from her friend’s garden. I have to admit that I don’t have fond memories of eating green beans as a child. My mom used to cook them curry style until they were limp.

I rediscovered green beans as an adult and realized that I like my beans tender-crisp. Simple is the name of the game for me.

  • green beans, ends trimmed (approx. 1 pound, or a couple of handfuls)
  • 4 cups boiling water
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice (approx. 1/2 lemon)
  • 1 tsp butter
  • pinch of salt, to taste


  1. Place beans in a ceramic or glass bowl.
  2. Cover with boiling water. This will semi-blanch the beans.
  3. Meanwhile, prep the garlic and lemon.
  4. In non-stick skillet, melt butter over medium heat.
  5. Scoop beans out of the boiling water with a slotted spoon and add to skillet.
  6. Add garlic, lemon juice and salt.
  7. Cook to desired tenderness.

My seven-year old crunched away despite not wanting to try them at first. Try one, I said. It’s okay if you don’t like it. Well, that seemed to work.
