Garlic Mashed Potato With Cauliflower

Sneak in a dose of stealth health by swapping in cauliflower for half the potato. No one will suspect anything. Cauliflower blends seamlessly into the mashed potato. This recipe uses butter and chicken broth to amp up the flavour. Feel free to use sweet potato instead of the cauliflower.


Garlic Mashed Potato With Cauliflower

Serving Size: 4-6

Garlic Mashed Potato With Cauliflower


  • 3 large yellow potatoes, cut into ½” chunks
  • 1 small cauliflower, cut into florets (approx. 4 cups)
  • 2 cloves garlic, finely minced
  • 1 tbsp butter
  • ½ cup no-salt added chicken broth
  • ½ tsp salt (or to taste)
  • 1 tbsp chopped chives for garnish


  1. In a large pot with a lid, cover potatoes with water and bring to a boil.
  2. Reduce heat and simmer potatoes for 10 minutes.
  3. Add cauliflower florets, and cook until fork tender.
  4. Remove potatoes and cauliflower from pot and mash well.
  5. Add garlic, butter, broth and salt.
  6. Add more broth, if needed, until desired consistency.
  7. Garnish with chopped chives.
