Curried Tomato and Lentil Dal Dip, which I served on top of Sunflower Barley Crackers

Lentil Dip, Barley Crackers & Cookbook Giveaway

If you’re looking for your next cookbook purchase, be sure to pick up Nourish by Nettie Cronish and dietitian Cara Rosenbloom. Full disclosure: thanks to Whitecap Books for sending me a copy of Nourish. I have to be honest, I haven’t had a whole lot of time to try the recipes from this cookbook, but I like the focus on seeds, nuts and beans.

I did, however, manage to squeeze in time to whip up the Curried Tomato and Lentil Dal Dip, which I served on top of Sunflower Barley Crackers. The dip gets two thumbs up especially with the added creaminess from the Greek yogurt. I was worried that the 2 teaspoons of curry powder would be overpowering, but I’m happy to report that it’s just fine. This is a no-fuss recipe with simple ingredients and can be versatile. Use it as a sandwich spread, stuff it in mini-pitas with shredded carrots, toss with pasta or use as a vegetable dip.The crackers were a challenge for me. Let’s just say rolling out dough is not my forte. The recipe called for 1/8″ thin, mine were 1/4″. So I bumped up the baking time to compensate. Regardless of your dough rolling proficiency, these crackers were a great complement to the creamy dip.A few recipes on my must-make list:

  • Thai Peanut Noodle Salad
  • Salty-Sweet Kombu Chips
  • Savoury Chickpea Patties with Tzatziki
  • Crispy Kale-Topped Pasta & Cheese Bake
  • Peanut Butter Cocoa Bliss Bites
