Lentil Soup With Barley

Spring weather in Toronto has been rather lukewarm. Gloomy, cool days call for soup. This soup features two Canadian crops: lentils & barley. In case you haven’t noticed, barley’s popularity has skyrocketed in recent months. Just Google “barley recipes” and you’ll see what I mean. Pot barley is a whole grain, something we can embrace.

I adapted this recipe for Lentil Soup with Barley as a mashup of two recipes from the Canadian Living Slow Cooker book. I like making it on the stove as it’s fast and easy.

Lentil Soup With Barley

Lentil Soup With Barley

Ingredients

  • 1 Tbsp vegetable oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 each carrots and celery stalks, thinly sliced
  • ½ tsp dried oregano
  • 1 bay leaf
  • 4 cups chicken or vegetable broth, preferably no-salt added
  • 1 cup green lentils
  • ¼ cup pot barley
  • 2 Tbsp lemon juice
  • salt to taste

Instructions

  1. In a large skillet, heat oil over medium heat. Fry onion, garlic, carrots, celery and oregano until
  2. vegetables are softened – about 5 minutes.
  3. Add bay leaf, broth, lentils and barley. Stir to combine.
  4. Bring to boil. Reduce heat to medium-low. Cover and cook for 25-30 minutes until barley and lentils are tender.
  5. Discard bay leaf. Add lemon juice and salt.
