Spring weather in Toronto has been rather lukewarm. Gloomy, cool days call for soup. This soup features two Canadian crops: lentils & barley. In case you haven’t noticed, barley’s popularity has skyrocketed in recent months. Just Google “barley recipes” and you’ll see what I mean. Pot barley is a whole grain, something we can embrace.
I adapted this recipe for Lentil Soup with Barley as a mashup of two recipes from the Canadian Living Slow Cooker book. I like making it on the stove as it’s fast and easy.
