Love This: Sweet Kale Salad

Over the next few weeks I’ll be showcasing a few of my favourite convenience foods that help me whip up great-tasting, healthy meals. Just to be clear, I have not been paid by these companies.

First up, is a kale salad kit from EatSmart that packages seven superfoods: bite-sized kale, slaw-style broccoli & cabbage, chicory, brussels sprouts, dried cranberries and roasted pumpkin seeds. The kits also comes with a poppyseed dressing, which I find too sweet and typically use the version made by Renee’s Gourmet. Balsamic vinegar and olive oil work just as well. You can buy the salad kit at most grocery stores or in an extra large bag from Costco. Frankly, it’s a no brainer way to eat your greens.

If you’re looking for a way to wow your guests, this salad just might do the trick. It gives the impression that you’ve slaved away in the kitchen chopping for hours on end. One guest asked me if it was Susur Lee’s special recipe. I had to confess that it wasn’t.

Five ways to spin this superfood salad into a meal, top with:

1) Leftover chicken, steak or salmon

2) Garlicky shrimp and cashews

3) Edamame and chunks of tofu

4) Chickpeas, slices of boiled egg and feta

5) Mandarin oranges, almond slices and lentils
