Quick Quesadilla Pockets

Lately, it seems like I have to rush off somewhere in the evenings. Night class. School council meeting. Book club. Foodie events. The past couple of weeks have been extra busy. For those days when dinner isn’t made ahead of time, my go-to are these super easy, delicious quesadilla pockets. The prep takes about 5-10 minutes (depending on how fast you can grate cheese!), and they bake in the oven for 10-15 minutes minutes. How fast is that?

We enjoyed this with a side of garlicky sauteed baby kale. When I say “we” I really mean my husband and myself. My 6YO had avocado, my 9YO had carrot sticks.

Quick Quesadilla Pockets

Ingredients

  • 1 can black beans, drained, rinsed (I buy the no-salt added version)
  • 1/2 cup fresh salsa, strain liquid*
  • 1 cup grated cheese (we like aged Cheddar)
  • 4 whole grain tortillas
  • *if you don’t have salsa, use 1/2 cup diced fresh tomatoes and 1 chopped green onion. You can can sub in other vegetables like diced peppers if you wish.

Instructions

  1. Preheat oven to 350F.
  2. Line baking sheet with parchment paper.
  3. In a large bowl, mash black beans, salsa and cheese.
  4. Spread 1/4 of mixture on half a tortilla. Fold the tortilla over to create a half-moon “pocket”.
  5. Place on baking sheet.
  6. Repeat using the remaining three tortillas.
  7. Bake for 10 -15 minutes, until the tortillas are lightly browned.

I like to dip the pocket in hot sauce for an extra flavour kick.
