30 May Rosemary Garlic Roasted Beets
I have to confess that I’m starting to tolerate beets, well, at least roasted beets. Previously, the earthy taste of beets used to shock me to my core. I even have beets relegated to the “do not send list” for my organic basket delivery.
Last Saturday, we came home with 10 beets. How did this happen you ask? Despite my protests, my husband scooped up a bag of Ontario beets handed out at the Taste of the Food Terminal. Why did he do this? Simple. He can’t resist free food. I, on the other hand, have much stronger willpower. Maybe if they were handing out bags of mushrooms, I might have caved.
Roasting vegetables brings out their sweetness, but I needed a recipe. I wanted some ideas on how to make the beets flavourful. I wasn’t convinced that roasting them plain would do the trick.
Being resourceful, I Googled it. Up popped Rosemary Roasted Beets from Canadian Living. Hurray! An hour later, out came sweet red orbs with hints of garlic and rosemary.
Maybe I’ll put them on my “send” list one day. Do you like beets? If so, how do you eat them?
