Sweet Potato and Celery Root Mash

Recently, we had an intruder in our organic vegetable basket. Intruder identified as celery root (known alias: celeriac).

My dilemma? What to do with this knobbly, gnarly, troll-like root vegetable.

I followed my own advice on introducing new foods to children – serve it with a familiar food. I decided to whip up a mash with sweet potato.

Sweet Potato and Celery Root Mash

Ingredients

  • One celery root, peeled and cut into 1″ cubes (learn how from BBC Good Food)
  • One large sweet potato, peeled and cut into 1″ cubes
  • 2 tbsp water
  • 1 tbsp butter
  • 1/4 cup milk
  • salt to taste

Instructions

  1. Place sweet potato and celery root cubes in a microwave-safe dish.
  2. Add water and cover.
  3. Cook in microwave until cubes are tender all the way through.
  4. Add butter and milk. Mash and add more milk, if needed, until desired consistency.
  5. Sprinkle with salt to taste.
