Wholesome Butter Chicken

I don’t know about you, but January has been a whirlwind of busy-ness. I’m taking a course, so quick, tasty meals are more important than ever. (Did I mention the course requires two blog posts/week?) While I’m a big fan of cooking from scratch as much as possible, sometimes you need a helping hand. Enter Butter Chicken Sauce by SummerFresh (found in the refrigerated section).

I was given a sample of the sauce during a food bloggers event and I have to admit I was skeptical about how it was going to taste. I was pleasantly surprised by the authentic flavour and the decent nutrition numbers. At only 80 calories for every 1/4 cup, even the sodium numbers are respectable at 125mg (a lot lower than comparable sauces that sit in the grocery aisle). What makes this recipe wholesome? I’ve added fibre-packed chickpeas and antioxidant-loaded spinach. Serve over brown basmati rice or with whole grain pita/chapati.

Ingredients

  • 1 tbsp canola oil
  • 8 bonesless, skinless chicken thighs, cut into 1″ pieces
  • 1 container of SummerFresh butter chicken sauce (500mL)
  • 1 can (19oz/540mL) chickpeas, drained, rinsed
  • 1 package frozen spinach (300g), thawed

Instructions

  1. Heat oil in non-stick skillet.
  2. Brown chicken pieces until golden-brown (no pink showing on the outside).
  3. Add sauce, chickpeas and spinach.
  4. Stir, cover and bring to boil.
  5. Lower heat to medium-low. Simmer for 15-20 minutes.

If you have any leftovers, use them to top an Indian-inspired pizza. Delish!Have you made butter chicken?
